What is the difference between pressed olive oil and regular?

Olive oil can be cold pressed from olives to get it out. That is usually the better grade.





To get out any remaining oil they steam the residue and get even more out. That is always the lowest quality and is not as tasty.What is the difference between pressed olive oil and regular?
Cold pressed olive oil was the original way of extracting the oil. High quality olive oils are made by cold press because it won't degrade the quality or flavor by adding heat and over processing it. When heat is applied during processing, some of the flavors will be evaporated. I only buy cold pressed extra virgin olive oil from Spain or Italy, it tastes much better than the other kinds. I might be wrong, but I think it's all pressed. Maybe they just called out ';pressed'; on the lable to make it sound fancy.
