Can I use olive oil for carrot cake instead of vegetable oil?

My guess is you'll be sorry with that substitution, vegetable oil has practically no taste Olive oil tastes like ........Well Olives do you think olive flavored carrot cake sounds good? A better sub might be canola oil for a cake. In cooking use olive whenever possible .
Yes indeed. I don't think I would use a fine Extra VIrgin variety though, as they are usually too strongly flavored for cakes (better for salads, sauteing).

Carrot and olive oil sounds like a health food cake to me.
Sure you could use olive oil, also try to use applesauce in the recipe to replace the vegetable oil. I have provided a recipe below using applesauce!
