Should olive oil be kept in the refrigerator?

You can, but it doesn't have to be refrigerated.

Better to keep a large container in a dark, cool cupboard and pour a small amount into a dispenser for everyday use. Olive oil can be put into the refrigerator or freezer without harm, which will greatly extend its shelf life. Waxes in the oil may crystallize out into needles or a slurry when the oil is chilled. Constant temperature changes when removing it from/putting it in the fridge will affect it, it may also pick up taints from other things stored in the fridge if not properly sealed.

Store the oil in its original glass bottle with lid tightly capped, and keep it in a cool place away from the light, like your pantry... not in cabinets near the stove.... Try to buy it in an amount that you are likely to use up within 2-3 months.





Virgin olive oil has a lower acidity than other olive oils. Oil from second and subsequent pressings has some fruit pulp in it and burns more readily. Virgin or extra-virgin is best for cooking...other olive oils, which do have more flavor, are best for salads and uncooked dishes.

there's no need to. if you do, v o o will not harden or soilidify, but the cool temp won't help your cooking time. just keep it in a sealed container at room temp if it won't be used for quite a while. just to ad lib, reports have it that there are benefits in taking a spoonful of v o o daily

Many people keep olive oil in the refigerator thinking that it will extend its shelf life or in order to avoid it to get rancid....this is ONE OF THE WORSE PLACES to keep it !!


Most of the time you can find bottles without harvest and expiration date...that should be the first thing to care of buying your bottle of olive oil at the grocery store rather than thinking how to preserve it later!! How can we think about extending its shelf life if we don't even know when it was produced?!?


Bottles of olive oil should not be refrigerated because condensation can occur on the lid and drip water back into the oil, which could spoil the oil鈥檚 flavor and cause rancidity.


The secret then is to keep it just at room temperature and away from the direct light and use it and be sure to buy a bottle where I can read the date of production or at least the expiration date.


Once the bottle is open it will last two-three months with no problem if it is a good product.
