Can Olive Oil be fried? Simmered? Is olive oil cancerous if fried?

What type of Olive Oil is it ok to fry or simmer?Can Olive Oil be fried? Simmered? Is olive oil cancerous if fried?
The only way it can become carcinogenic is if you heat it too high a pyrolyze it. By doing that you form all kind of extraneous compounds some of which are most assuredly carcinogenic. But having said that, generally you have more important and larger sources of cancer causing chemicals around you. So go ahead and use it. Be aware that olive oil may have a lower smoke point than refined vegetable oil.

The smoking point of olive oil is low, and that is why most restaurants use other oils for frying. Peanut oil is good for frying...it has a high smoking point, and the flavor is mild. The oil with the highest smoking point to my knowledge is clarified butter, but of course, the cholesterol in the butter is high.....but it is oh so tasty!





The reason you do not want to heat oil to the smoking point is because it changes the oil. I am not sure if it makes the oil a carcinogen, but it definitely changes the flavor of the oil and the food you cook with it for the worse.
Yes,it can be fried or simmered. Well,it might be cancerous if it has black parts all over the food. If you eat to much of the black part it might cause a cancer. It can burn your liver and cause cancer.

Pure olive oil is very poor frying oil, especially if you're deep-frying. It starts to smoke at a very low temperature, it gets a bitter burnt taste, and it can catch on fire very quickly. Plus, the taste is too strong when heated to a high temperature and it tends to overpower anything that you're frying. If it burns, the burnt bits can be carcinogens, but studies have not been completely conclusive.


Mixed oils containing some olive oil are better, but they can still taste bitter if heated to a higher temperature. Neutral oils are much better for frying.


You can only simmer in liquid, you can't simmer anything in oil (to simmer is to keep liquid at a very slow boil over low temperature) . I've only seen people simmer in oil once in my life- normally you simmer things in broth, wine, or sauce.


It's perfectly safe to simmer liquids that have olive oil in it.

I only use olive oil for simmering and frying - try to extra virgin kind it is very light. olive oil is not cancerous fried - that's just silly, it is a vegetable product afteral, not an industrial cleaner!
