For what? If you are cooking with it then yes. If you are not cooking it you will not get that olive oil flavor.

For frying, yes, for general cooking, yes. For salad dressing etc., yes. It just depends on why you want to use the canola versus the olive oil. Olive oil is great for health reasons and for taste and flavor. Canola is great for frying because it has a higher burning level, and if you don't want the olive flavor in foods, canola would be a good healthy choice.

all sarcasm aside, both oils have different uses. if its taste you're going for then i recommend olive oil. if you're trying to save money then use canola oil. if you're trying to fry something try using grapeseed oil or peanut oil. they not only make your fried food taste great, but they last long as well. just make sure that after frying you strain out all the gritty stuff. reasearch different kinds of oils you can use for cooking. you'll find out alot of great things such as smoking points, flavors etc.

If you want the authentic flavor in most Italian dishes you should use extra virgin olive oil. If you don't like that, and are more into the american style, the canola oil is fine.
I gasped when I seen your question. Heaven's no dear, the ONLY acceptable substitute for olive oil is Quaker States 10W-30. This will bring out the natural flavors of anything cooked in it Remember, though, to change your cooking oil every 3-5 thousand miles.
