Healthy cookie with Olive Oil & Chocolate, Honey and soy or nut flour and eggs?

I am trying to make a healthy cookie. One doctor eliminated sugar as high carb but insisted that I use honey as a joint lubricator with Splanda, The other eliminated flour and substituted Soy flour or grown nuts, the other took out butter and shortening and wants me to use olive oil.and chocolate instead of butter I decided to make a cookie and use the recommended ingredients. I did . They taste great but are hard as a rock. Any ideas how to soften them and stay with in the guidelines of the doctors.Healthy cookie with Olive Oil %26amp; Chocolate, Honey and soy or nut flour and eggs?
i know of none.
