What's better frying in olive oil or baking?

I'm making egg plant parmesan and I found two different recipes ones frying it and ones baking so I'm wondering which one would be more healthier.What's better frying in olive oil or baking?
Olive oil. . . If you dredge, egg, and crumb your eggplant, you'll


need to sautee or fry it before taking it to the oven. Frying gives the


eggplant a solid crust that will help seal it against the liquid from the


sauce when you end up baking the dish off. Bake the dish off without


developing a crust, and you're going to wind up with nasty, soggy


eggplant in a tomato bath.





Get a good sear/crust on the eggplant, and it'll hold its structure in the


oven when you bake it off.





Try substituting some aged, funky Provolone for 1/2 of the mozzarella

to make eggplant Parmesan you need slice them coat them with flour and fry them first then you bake them with sauce and cheese .





Regarding the healthier part , if you limit your portion of everything that you eat you will maintain a healthier way of living.

Baking. Frying with olive oil maybe healthier than your regular oil but it loses a lot of the goodness when you heat it as high as to fry with it.
Baking it would definitely be healthier, but the fried eggplant will probably taste better.
baking is always healthier but olive oil does not do well with heat. use canola oil instead or a soybean oil would work.
Baking i guess but i prefer frying and its olive oil so it good for you
bake it
